I bought some green mangoes from the market and last night we made our first batch of 2 kg atchar. We prefer to make our own atchar as the commercial product contains pieces of the shell of the pip of the mango that is really horrible and tooth-breaking when you unexpectantly bite into it. We also use much more garlic than the commercially available products contain. In the near future I will publish a post that shows the process and the recipe that we use for our achar.
